Several years ago, mason jars were pretty much strictly used for canning. Now, most likely thanks to social media, they are great for portable single-serve meals on-the-go. Whether you are looking for an easy, on-the-go breakfast or something Pinterest-worthy to share with your followers, BOB has some great recipes to share.

Mason jar overnight berry oatmeal

Starting your day off right is easy when you can get a jumpstart the night before. This easy recipe is my go-to breakfast when I know I’ll have a busy morning. It’s a healthy option that is very filling and easy to prepare.

Ingredients:
Glass mason jar with lid
¼ cup of uncooked rolled oats
½ cup of fat free skim milk (I substitute with Almond milk)
¼ cup of fresh blueberries
¼ cup of fresh strawberries or raspberries
1 container of plain fat free Greek yogurt (I substitute with blueberry Greek yogurt)
¼ teaspoon of cinnamon spice

Directions:
Mix all ingredients together, except the cinnamon spice, and pour into the glass mason jar. Then, top with cinnamon spice. Store in the refrigerator overnight to enjoy the next day!

Mason jar chopped salad

Anyone who knows me, knows how much I love eating salads for lunch. You can make these a few days in advance so you can meal prep for a few days. Any combination of veggies and protein will work, so feel free to mix it up and make it your own.

Ingredients:
Glass mason jar with lid
3 cups of chopped romaine lettuce
2 medium diced Plum tomatoes
6 Tablespoons of crumbled feta cheese
6 sweet mini baby bell peppers
2 large sliced hard-boiled eggs
1 cup of cooked chicken pieces
Salad dressing of your choice

Directions:
Layer the ingredients in the glass mason jar, starting with the dressing. Then, cover and refrigerate. When you are ready to eat the salad, just shake and enjoy.

Mason jar burritos

The burrito bowl has gained a lot of popularity during the last couple of years, so I love this mason jar variation of that popular recipe. There are so many topping ideas, so customize it to make it your very own.

Ingredients:
Glass mason jar with lid
1/2 cup dressing, sour cream or salsa
1 cup each black beans and corn
2 cups cooked rice white, brown or quinoa
2 cups chopped grilled chicken or beef
1 cup each diced tomatoes, avocado, romaine lettuce, spinach (red onion optional)
Sprinkle of mozzarella cheese
1 Tablespoon of chopped cilantro
Juice of 1/2 lime

Directions:
Cook rice according to package directions. Once rice is finished cooking, stir in 1 Tablespoon of cilantro and juice of 1/4 lime for every cup of cooked rice. Then, layer the ingredients in the following order: 2 tablespoons dressing or salsa, 1/4 cup black beans, 1/4 cup corn, rice, 1/2 cup chicken, 1/4 cup tomato, 1/4 avocado, 1/4 cup romaine, and cheese. Cover with lid and refrigerate. When ready to eat, shake jar until contents are mixed and enjoy!

Mason jar carrot cake overnight oatmeal

If you have a sweet tooth and are wanting a sweet treat, this is an easy dessert. This is an easy alternative to carrot cake without all of the work involved in making a carrot cake.

Ingredients:
Glass mason jar with lid
¼ uncooked rolled oats
1 small shredded uncooked carrot
1 small shredded pear
½ cup plain fat free Greek yogurt
¼ teaspoon of pumpkin pie spice
Teaspoon of pecans or raisins

Directions:
Stir together all ingredients in glass mason jar. You can also add pecans or raisins to top this sweet treat. Cover and refrigerate overnight and enjoy the next day!
